MASCARIELLO BRAISED IN BEER
Ingredients for 6 people
1 kg of beef cheeks (In Naples at the butcher's ask for mascariello)
4 tablespoons extra virgin olive oil
30 g of butter
66cl of Dubbel Treddet beer
Rosemary to taste
Sage to taste
Bay leaf to taste
Wild garlic to taste
salt to taste
pepper to taste
PREPARATION
• In a pan, heat the oil and butter, then brown the meat cut into fatty cubes: turn it over, add the herbs, salt and pepper.
• Baste the pieces of meat with beer. Bring to a boil, then reduce the heat, cover, and simmer for about 3 hours.
• After this time, leave it to cool, and finally before serving, heat it in its sauce and serve it hot.
